Guilt Free, Gluten Free

Life without bread doesn't mean you can't still enjoy cooking or trying new recipes. I am a college student who loves to create meals for my friends and family. I want to prove that you can eat fresh cuisine on a student's budget, and you can still make time for working out.

GF Pizza!

I had a MAJOR indulgence today, with no regrets…PIZZA!

Pizza has been one of the major things I have missed a lot since becoming gluten free and I found a great GF dough mix at Whole Foods. Bob’s Red Mill brand sells the dough dry, just add water, eggs, and olive oil.

Follow the directions on the package. Add pizza sauce, mozzarella, and lots of veggies. I used mushrooms and garlic for mine.

Bake at 425 for 18 minutes. Enjoy!

Tilapia!
Tilapia is one of my favorite fish because it is cheap and simple to cook. It is a flaky white fish that is thin.
Sorry for the bad cell phone picture quality, but here is my recipe:
2 tilapia fillets covered in lots of paprika and cayenne pepper. Add as much or little as you want. I love spicy food, so I am heavy handed with the spices. Throw on the grill for about 10 minutes, flipping half way through. If you don’t have a grill a pan suffices just fine.
Grilled mushrooms. Cut up mushrooms and put them on a kabob skewer. Grill for a few minutes on each side until tender.
Raw broccoli florets. Eat. Enjoy. Simple.
There you have it. This took me about 10 minutes to cook total! Filling and yummy. View high resolution

Butter Lettuce is by far my favorite lettuce. I love the softness of it (like butter…) and the color. I think adding lots of color to your meals makes them instantly more delicious. 
Costco sells it alive in the summertime (aka with the roots still attached). It is really high quality and much cheaper than going to Whole Foods.
Good gluten free tip: use pieces of butter lettuce and dip them in hummus for a good snack, replacing pita chips or bread slices.  View high resolution

Conquering Lamb

Easter Sunday feast!

My roommate, our friend, and I joined forces to create an AMAZING Easter feast last April. Splitting the cost of groceries three ways saved us each at least 15 bucks compared to eating out.

Rack of lamb

Rubbed with rosemary, thyme, salt, and pepper. Honestly put as much of everything as you want for sake of taste. Finely slice several pieces of fresh garlic and rub around meat. Rub on a couple tablespoons of olive oil for some nice sheen and moisture, and to hold the spices in. Set lamb on a cookie sheet, bones pointing up and bake at 450 degrees for 15 to 20 minutes.

Twice baked mashed potatoes

This was the calorie-killer of the meal…lots of cheese and butter involved. I’m not proud, but everyone needs to splurge once in a while, right?

Simple, organic salad

We used a prewashed bag of mixed greens (my favorite for salads). Add in whatever you like! For me this means: baby heirloom tomatoes (Trader Joe’s has great ones for cheap), cucumber, raw walnuts, and goat cheese.  We used light vinaigrette for dressing. I personally only prefer very light dressings. Plus, heavy dressings such as ranch ruin the integrity of the salad and add many unwanted hidden calories.

Good Tip: Adding a few candles to your table makes any meal better!

Interval Incline Sprints

I loathe running. People always talk about runner’s high, but I am yet to experience it. When I drudge along on a treadmill I am going at a 5.3 on average, no exaggeration. I’ll be jogging in the gym and realize the person next to me is hauling at about 6.5 and barely breaking a sweat. To each her own though! However, I found that the best way to get the most out of your cardio workout is to mix it up with intervals. In fact, studies have shown that interval sprints burn more calories than single-paced long runs. Here is an easy workout that I designed to do in 35 minutes! The speed obviously varies from person to person, based on how comfortable you are with sprints.

Gluten Free Misery?

I’m starting this blog to prove that gluten allergies, or even forgoing gluten by choice, is not a miserable experience. I was diagnosed with a gluten allergy a couple months ago, and when I tell people their instant reaction is generally, “Oh my God! I would die! I love pasta and bread! How do you eat?”

My allergy has become a blessing in disguise because I have lost weight without trying, feel more healthy, and am much more conscious of what I put in my body. I love scarfing down a “healthy” Subway sandwich as much as the next girl, but it catches up to you. I have also begun to embark on a “paleo lifestyle”—a term I only learned this year, but one that is catching wind fast. Paleo means a hunter, gatherer diet—no gluten, no processed foods, no sugar, no excess salt, LOTS of organic. After eating “paleo” for about 20 days I lost 9 lbs., my acne cleared up, and I felt great (i.e. no bloating or post-meal remorse). I will continue to explore living a strictly paleo lifestyle.

Besides the infinite supply of delicious gluten free products (Thanks, Whole Foods!), being gluten free can be fun, painless, and yummy! I want to share some of my favorite recipes I have learned, and want to create new ones along the way. I love cooking for my friends and family, and experimenting in the kitchen.
